Strawberry Cake







Strawberry season again so as the strawberry cake baking season in Vanessa's kitchen. This is 6 in cake and can tell how big the strawberry from this picture. Love it very much ! 



Orange Cheese Cake



Ingredients:

sponge cake

(A)

5 egg yolk

60g sugar

80g Orange Juice

60g corn oil

(B)

160g plain flour

1 tsp baking powder

1/4 baking soda



(C)
5 Egg white

(D)

100g sugar

1/4 tsp Cream of Tartar


Method

1. Beat A till well combined, add in B and Mix well, Set aside.

2. Whip C till foamy, gradually add in D and whisk until soft peak form.

3. Mix egg white mixture into batter gradually and stir gently till well incorporated. Pour batter

into 8 inch mould.

4. Bake at 150 C in a preheated oven for 50 minutes till cooked. Remove and invert, set aside.

Unmould once the cake is cool and cut the cake horizontally into 3 layes.


Orange Cream cheese frosting

Ingredients:

(A)
250g Philly Cheese
100g  Sugar
300g Whipping Cream

(B)
1/3 cup Hot water
1 packet of Gelatin ( 7g per packet)

(C)
Fresh Orange puree 50g



Method:

1) Mix Ingredient B and sift , set aside.
2) Beat Cheese with sugar for about 5 minutes add B mixture and beat for a little while.
3) Add whipping cream and beat till mixture begin to thicken.
4)  Add in Orange puree and mix.
6) Pour the mixture in to a slice of cake in the the spring pan repeat till finish and place in fridge for about 4 hrs. Decorate with some fresh fruits.







Rocking Horse Baby Shower Cake



Many of my girl friends pregnant lately and this time I baked a special cake for a friend's baby shower. She is expecting a baby girl next month. This year is horse year so i baked a rocking horse cake. This is my first time to pipe the whole cake. Not bad for the first time :)

Beetroots Ang Ku Kueh 甜菜根红龟粿





朋友给了一些甜菜根。 没有煮过甜菜根的我就把它们变成甜菜根汁加进了红龟粿面团来染色。没想到这天然的色素是多么的讨喜。


番薯泥 150g,
糯米粉 250g,
糖 3tbsp,
甜菜根汁 100g
粟米油 50g
香蕉叶剪片备用
揉的时候如果水分不够,就倒一些进去。搓揉成不黏手的软面团即可。

做法:
甜绿豆馅:
绿豆片~300g (浸5-6小时或隔夜)
细糖~140g
水~少许

馅料做法:
1. 绿豆片加少许水蒸熟,趁热加入细糖用搅拌器搅烂即可。
2. 分成每粒18克重。

皮料做法:
1. 番薯肉用大火蒸熟,趁热压烂成泥,备用。
2. 全部材料除了甜菜根汁之外,全部混合在一起
3      甜菜根汁 慢慢的加入,加到不会太湿的黏度揉成 一团
4. 将面团分出小等份(20g 重) 包入馅料,揉成圆形,。
5. 按入模型内敲出(模型要撒点茨粉敲出)要不然会黏模 , 放在抹上油的 香蕉叶上。
6. 蒸约4分钟,取出。马上涂上少许食油,待冷后即可食用。




















Gelatin Art ( Gelatina Floral)



I first knew about the gelatin flowers from a Mexican friend. These flowers are made by injecting a milk based gelatin mixture into a clear jelly. Gelatin flowers originated from Mexico. Love at first sight and i tell myself i will try to make it one day! Finally, i managed to get the syringe and needles. After searching for some videos,  i tried my own. This is the end result of my first attempt, well this is not pretty but is a good start... i will polish up my injecting skills.

Purple Ang Ku Kueh 紫薯红龟粿













Recipe adapted from Baking Wonderland. I did some changes !


紫薯泥 150g,

香蕉叶剪片备用
