Green Tea Red Bean Hokkaido Cupcake 绿茶红豆北海道蛋糕
Hokkaido Chiffon cupcakes
*makes 8 cupcakes
Ingredients:
3 egg yolks
40g corn oil
60g milk
90g Low Gluten flour
2 tsp green tea powder
3 egg whites
1/4 tsp cream of tartar
60g castor sugar
Green Tea cream filling:
60g dairy whipping cream
10g Sugar
1/2 tsp green tea powder
150g Red bean paste
Method
1. Whisk egg yolk,add in oil and milk and mix well.
2. Sift flour and green tea powder into the egg yolk mixture.
3. Beat egg whites with cream of tartar until foamy and then add in sugar and beat till soft peak.
4. Fold in half of the egg whites into the mixture and mix well. Then add in the other half and mix them evenly.
5. Fill the mixture into the cups.
6. Bake at pre-heated oven at 170c for 30- 35mins. Leave cool.
7. Make a small hole at the middle, pump the green tea cream into the cake and finish with some red bean paste.
8. You can either chill before serving or have it straight after filling in the cream and red bean paste.
北海道戚风杯子蛋糕 (可做8个杯子蛋糕 )
蛋白3个
塔粉1/4tsp
糖60g
(打至硬性发泡)
蛋黄3个
牛奶60g
低粉90g
corn oil 40g
绿茶2茶匙
内馅
60克鲜奶油
10克糖
绿茶粉少许
150克 罐装红豆馅
内馅做法把鲜奶油和糖一起打发。加入绿茶粉,混合均匀。
制作过程- 做法:
1.)把蛋黄打匀,加入corn oil,牛奶,低粉,绿茶粉拌匀。偹用。
2.)把蛋白打至粗泡泡后加入Tartar粉打起。慢慢加入糖。打至硬性发泡。
3.)把1/2份蛋白加入蛋黄糊中拌匀。
4.)再倒回剩余蛋白里,轻轻拌匀即可。
5.)把面糊倒入纸杯里,7/8分满就好.
6.)以170度烤30-35分钟.
7.)待凉后才挤入绿茶馅和红豆馅,然后冷藏才好吃的!

Traditional Mooncake 传统月饼
材料:300g普通面粉、240g糖青、75g花生油、半汤匙硷水 ~ 材料全部拌匀,休息2个小时,就可以包馅了。
以170度烤15分钟,取出稍微凉,涂上蛋液,再烤多15分钟。

桂花果冻月饼 Osmanthus Jelly Mooncake
Ingredient:
1 liter water
200g sugar
10 g Agar agar powder
1tsp Osmanthus
1 tbsp wolf berries
Method:
Dissolve 10 g agar agar powder with 200g sugar. Pour the mixture into the cool water stir and bring to boil over low heat. Add in Osmanthurs and wolfberries . Pour the mixture into moulds and allow to cool. Put moulded agar agar solution in the refrigerator for 1/2 hour and serve chilled.
Homemade Salted Egg 自制咸蛋
Ingredient:
12 duck egg ( I use chicken egg)
4 cups of water
1 cups of salt sea salt
1 tsp of shaoxing cooking wine.
Method:
Salted egg is very easy to make as long as all the utensil we use is clean without oil.
1. Prepare egg rinse and air dry
2. In a pot pour in water , add in salt bring it boil. Once the salt completely dissolves turn off the heat and let cool completely ( stay cool over night also can )
3. Pour the salt water in a super clean container ( prefer glass container) I use plastic. Put in all the egg and cover the container , place at room temperature( i store it in the pantry)
Salted egg ready in 3 weeks. Can try to cook one egg after 3 weeks and taste whether salty enough. If not salty can let it brine for another week. The egg in the pic about one month and you can see the yolk that releases oil after being cooked is consider as high quality product. Use duck egg maybe need longer time because duck egg with thicker shell.
