清爽马蹄糕‏ Water Chestnut Cake







材料

马蹄粉一盒 250g,砂糖180g,马蹄肉150g,清水1400g



做法


1、马蹄粉加水700g搅拌至没有粉粒,制成生粉浆.
2、马蹄肉切粒,放入生粉浆中,拌匀.
3、砂糖加水700g煮至溶化,制成糖水.
4、把热糖水加入生粉浆中,搅拌均匀,制成马蹄粉浆.
5、把马蹄浆倒入容器
6、大火蒸约30分钟,放凉后切形即成.

P/S :
1、刚做好的马蹄糕有点软,可以先放到冰箱里等到够冻再吃,就好爽口拉!
2、也可以用不粘锅去煎,别有一番风味。

3。糖的口味可以多加。各人喜好不同。






小馒头 (蛋果子)






***食谱取自:君之的手工烘培坊

材料:
风车粉(马铃薯淀粉)135g, 低筋面粉 20g,奶粉25g,细砂糖 40g,全蛋 45g,泡打粉 1茶(5ml)

做法:
1。鸡蛋打散,加入细砂糖搅拌均匀。(不需打发)
2。混合筛入马铃薯淀粉,低筋面粉,泡打粉和奶粉进蛋液里。
3。撮成光滑面团,(开始会很松散,但很快便会成面团)*适情况而调整马铃薯淀粉和蛋液的用量,面团要适中的软硬度,搓好的面团不黏手,也不会过分干燥裂开。太黏加点粉,太干加点蛋液。
4。撒少许马铃薯淀粉在桌上,面团擀平(约0.5cm厚),切成约黄豆般大小,搓成小圆球。
5。预热烤箱至180度,小圆球之间要留空隙,因为烤后会稍为膨胀。烤约10 分钟左右,或烤至少许金黄色便可。
*这小馒头的口感不是入口既化的那种。这个的口感是酥酥脆脆的。
**面团太干容易裂开,进烤炉前喷少许水,减少裂开的机会。

English Lemon Gateau 英式柠檬蛋糕


Recipe adapted from Baking Wonderland.

。。英式柠檬蛋糕 。。

蛋糕体材料

蛋黄3粒
低筋面粉60g
鲜奶 40g
玉米油 30g

蛋白3粒
幼糖 50g
lemon 汁 半茶匙

6寸烤馍,底和边缘铺上牛油纸。
一般戚风做法,150度烘烤35-40分钟。熟后倒扣,脱模,切成3片备用

柠檬酱材料
(a)
鸡蛋2粒
幼糖60g
柠檬汁 65g
柠檬皮硝1粒

牛油 45g

把材料(a)全部隔水煮至松发,用过滤网过滤之后,加牛油,继续煮至浓稠即可待凉备用。

vivo topping cream 150g 打发备用

现在托盘扫一点鲜奶油,才铺上第一片戚风
涂适量topping cream,淋一层柠檬酱,再铺第二层蛋糕,再涂适量topping cream和淋一层柠檬酱。之后铺上最后一片蛋糕,整个蛋糕涂上适量cream,再淋上剩余的柠檬酱,冷蔵之后才切片享用.

This is my 2nd year to cook Poon Choi. I cooked this special dish during CNY for my friends. Took me about 3 to 4 hours to prepare this dish but happy to see a big smile on everyone. Worth it !

Pineapple Rolls




Recipe adapted from Baking Wonderland

Home made pineapple filling please refer to my old post Pineapple filling 

Ingredients:

250 g butter
50 g powdered sugar
1 egg yolk
360 g all purpose flour
2 Tbsp custard powder


Egg Brush

1 egg

Method:

Preheat oven at 160° C.
1. Cream butter and sugar till white.
2. Add in egg yolks and beat at low speed for 1 minute.
3. Fold in flour gradually.
4. Insert pastry into cookie press and press into strip of about 5cm each.
5. Put the rolled pineapple filling onto the pastry and roll it up.
6. Bake for 10 minutes, remove from the oven and brush with egg and bake for another 10 minutes or when tarts is light golden brown in color.

饼皮材料:
250g牛油、50g糖粉和1粒蛋黄拌打成奶油状,加入过筛的360g面粉及2大匙蛋黄粉(custard powder),揉成团,休面30分钟。

将面团放入模型中,挤出5cm的长条,把馅料放在一端卷起,排放在烤盘上。

1粒蛋,打散,抹皮用。

以160度烤10分钟,取出扫上蛋液,再放回烤箱烤10分钟。








Cranberry Pecan Cookies 香脆蔓越莓胡桃曲奇






This is my auntie's recipe.

Ingredient A :

170g  Unsalted Butter
170g Icing Sugar, 1 1/2 egg (B)

Ingredients B:

340g Plain Flour
25g Custard powder
1/2 tsp bicarbonate of Soda

Ingredients C:

80g toasted chopped Pecan
40g dried cranberries

Method:

1.  Beat A until lightly fluffy.
2. Add in B and mix well.
3. Add in C and mix into dough.
4. Roll dough into 5mm thick and cut out with cookies cutter. Arrange onto a baking tray.
5. Bake into a preheated oven at 180C for 10-12 minutes until cooked and golden brown.

Chocolate German Cookies 巧克力德国酥饼









Recipe adapted from Baking Wonderland


Ingedients:

250gm 牛油
80 gm 糖粉(过筛)
250gm 马铃薯粉(过筛)
100gm 面粉(过筛)
3 tsp  巧克力粉


做法:
1)牛油(室温软化)和糖粉搅拌均匀。
2)慢慢加入马铃薯粉,面粉和巧克力粉搅拌均匀后粉团还是很粘的,将粉团放入冰箱大概10分钟就可以拿出来做造型了。
3)我用155度大约15分钟。

● butter 250g (softened)
● Icing sugar 80g
● Potato Starch 250g
● Plain flour 100g
● Chocolate Powder 3 tsp


Method:
1. Mix butter with sieved icing sugar with mixer until fluffy.
2. Add in sieved other all ingredients and form dough.
3. Divide the dough into small balls depends how big you want your cookies to be. (I use 10g)
4. Decorate your cookies with press the small dough with fork.
5. Pre heat oven to 155’C. Bake for 15 minutes.







Minecraft Fondant cake





This cake was specially baked for my beloved son Dennis. He loves the minecraft game so i thought this cake will sure put a Big Smile on his face. My son turned 11 years old on first day of CNY. My baby is growing up! It seems like it was just yesterday that I would hold him in my arms and now he is 11 year old boy. It seems like not too long ago he was just “my little man” toddling around the house. People say “time flies,” but I really wish we could slow things down and enjoy these years more.
I remember the day Dennis was born. I went into labor after the CNY reunion dinner with my family. He came into the world without much fuss. My husband and I were blessed with a beautiful baby boy.

Happy Birthday to my little "Big Man". We love you more than you will ever know.
