Apam Balik ( Traditional Malay Pancake) 曼煎糕


Ingredients: 



(Batter) 

160 g all purpose flour 

3/4 tsp yeast 

half tsp baking soda

3 tbsp sugar

1 egg 

75g Coconut milk 

75g Milk 

few drops of vanilla Essence


Filling: 

200g Peanuts, Roasted and ground coarsely

20g Sugar 

1 can cream corn 

butter 





Method: 

1. put all the batter ingredients together and mix well. Set aside for 45 minutes. 

2. Combine peanuts with sugar and mix well. Set aside 

3. Heat flat pan till hot (no oil needed). Slowly pour in one small cup batter and let it spread 

out into a pancake. When Surface of pancake is set, brush with butter and sprinkle with 

peanuts and cream corn filling. Cover and continue to cook till surface of pancake is dry. 

Fold pancake into half to form a half moon shape. 




材料:(皮)

面粉 - 160g

酵母  - 3/4小匙

苏打粉 - 半小匙

糖 - 3汤匙


鸡蛋  - 1个


椰浆  - 75g


牛奶 - 75g


香草精 - 半小匙





(馅料)


花生碎 烤熟


糖 


罐头玉米酱


牛油





做法:


1. 把所有材皮的材料混合搅拌均匀,待放大约45分钟


2. 把烤熟的花生碎和糖搅拌在一起


3. 用平底锅,小火,倒入1杯糊,慢慢散开糊,让锅的边缘也沾上少许糊,关盖,煮至面糊出

现很多的小洞洞

4. 涂刷上少许牛油,撒上花生糖,加入玉米酱,关盖,再煮一


5. 用抹到在锅的边缘刮一刮,将面饼刮起折对半,看见面饼褐黄色的,就可以了
